Well, if you needed evidence that there is an artisan cheese renaissance happening in the Pacific Northwest of late, here you go...I bring you another new Oregon artisan cheesemaker! Brendan Enright of Celtic Shepherd Creamery just started producing sheep's milk cheese in Canby, Oregon in May of this year. Enright is carrying on his family's tradition (his father was a shepherd in Ireland) by establishing his own sheep farm....more interestingly, he is crossbreeding his dairy stock with an Icelandic strain of sheep to create what he hopes will be a hardier breed (click on the link to see a picture of one of these beauties). Enright plans to make a whole variety of sheep's milk products including yogurt, fromage blanc and a soft ripened variety of cheese. For now, you can find Celtic Shepherd products at Cutsforth's Thriftway in Canby...or you can meet Brendan Enright in person at Eugene Market of Choice stores August 4-5th and 11-12th (call for details).
