Tasting Notes: Carmelis Chabichu and Goatgonzola

Carmelis Goat Cheese Artisans Ofri and Ofer Barmor make several dozen styles of soft ripened and aged goat cheeses in the hills overlooking Okanagan Lake in Kelowna, BC.  If you stop by the beautiful on-site shop, be sure to sample one of their 24 varieties of goat's milk gelato as well as the great cheeses.

Chabichu A cyllindrical soft ripened cheese made in the style of the French Chabichou and reflective of the Barmors' journeys to Loire Valley. Mild and slightly salty with mushroomy and deep earthy undertones....has just a bit of a tangy bite that will sharpen further as the cheese ages.

Goatgonzola One of the Northwest's only all goat's milk blues is worth seeking out.....firmer than Gorgonzola, even a little crumbly, this cheese has the characteristic sweet, addictive spiciness of its namesake. If Gorgonzola were aged longer, this might be what it would taste like.
